Speculoos (or Biscoff) cookies have a unique flavor that is hard to describe — aromatic, crisp, crunch & gingersnap-like. They are delicious dunked in tea, coffee and milk, but even better in the form of a cake! Our version is a coffee cake that is light, fluffy and rolled with Biscoff cream that captures the distinctive flavour of those little caramelised biscuits perfectly.
